    2 fully ripe avocados
    15-oz. can black beans, drained and rinsed
    12-oz. cooked diced pork~or~chicken (about 4 cups)
    1 C. diced tomato
    1 C. peeled jicama~or~celery, cut in strips
    1/3 C. crumbled queso fresco~or~mild feta cheese
    1/4 C. cilantro
    1/2 C. prepared red-wine vinaigrette~or~Italian dressing
    Lettuce (optional)

    Cut avocados lengthwise around middle; twist to separate halves, remove pits and skins.

    Dice one avocado and slice the other in thin wedges.

    In a medium-sized bowl, combine diced avocado, beans, pork~or~chicken, jicama~or~celery, queso fresco~or~mild feta cheese,cilantro and 2 tablespoons of the dressing.
    Spoon onto 4 plates, lined with lettuce if desired.
    Garnish with avocado wedges.

    Drizzle with remaining dressing.

    Serves 4.
