    List of Ingredients




    2 cups chopped romaine lettuce leaves, tough outer leaves removed
    2 roasted red bell pepper cut into 1/2 inch pieces
    2 ripe medium sized tomatoes, cut into 1/2 inch pieces
    1 hothouse (seedless) cucumber, peeled and quartered lengthwise, then into 1/2 inch pieces
    1 cup pitted Kalamata olives, halved
    1/3 cup diced (1/4 inch) red onion
    2 tablespoons chopped fresh mint leaves or flat leaf parsley
    Salt and freshley ground black pepper, to taste
    2 tablespoons extra virgin olive oil
    2 tablespoons red wine vinegar
    1 cup coarsely crumbled fresh feta cheese

    Recipe



    Combine the lettuce, roasted peppers, tomatoes, cucumber, olives, onion and mint in a large bowl. Before serving, place in a decorative salad bowl.

    Just before serving, season with salt and pepper, then toss with oil and vinegar. Toss in the feta cheese and lightly toss again, trying not to break up the cheese too much.

    Serves 8
