Red Wine Basil Vinaigrette

2 cloves garlic, crushed
2 tablespoons of Dijon mustard
1/2 cup of red wine vinegar
1 teaspoon of ground black pepper
1 cup of extra virgin olive oil
1/2 cup of fresh basil leaves, chopped
1/2 cup of fresh parsley, chopped
Combine garlic, mustard, vinegar and pepper in small bowl. Whisk well. Add oil in slow stream. Whisk constantly until vinaigrette has thickened slightly. Fold in the basil and parsley. Makes 1 1/2 cups.
