Tomatillo & Black Bean Salsa/Salad

List of Ingredients
2 cans tomatillos (available in most large grocery stores), drained and chopped
2 cans black beans, drained
2 Roma tomatoes, chopped
1 yellow pepper, small dice
1 small red onion, diced finely
A few jalapenos (to taste), see note below
Salt and pepper to taste
1-2 tablespoons lime juice
Dashes of green Tabasco sauce (to taste)
1 (10 ounce) bag shredded lettuce or 1/2 small head lettuce, shredded
1-2 cups shredded cheddar or cojack cheese (optional)
1 bunch cilantro, chopped (optional)
Directions:
In a large bowl mix the tomatillos, beans, tomatoes, yellow pepper, red onion, jalapenos, spices, lime juice, and Tabasco. Note: Do this step at least a few hours before serving (preferably the night before) so that the flavors can blend.
Just before serving, add to the salad the shredded lettuce, and if you wish, the cheese and cilantro.
Serving ideas: Serve as a side salad when you add the cheese. Can be served as a salsa when served with tortilla chips. Can also be served as an accompaniment for grilled meats such as chicken or pork.
Note: Instead of real jalapenos, use a product called Jalapeno Nacho Slices. They are milder and I chop them slightly before adding to the salad.
