    Tomato, Mozzarella and Basil Salad

    3 medium ripe tomatoes (A combination red and yellow looks nice)
    1 8-ounce ball skim milk mozzarella cheese
    1/4 to 1/2 cup fresh basil leaves, rinsed and drained
    extra-virgin olive oil
    balsamic vinegar
    salt & black pepper, to taste

    Recipe



    Slice the tomatoes into thin slices. Slice the mozzarella cheese into very thin slices. Arrange the ingredients on individual plates by alternating layers of tomato slices, basil leaves and cheese slices. Drizzle each salad with about 2 teaspoons of extra-virgin olive oil and 1/2 to 1 teaspoon balsamic vinegar. Sprinkle with salt and pepper, to taste. Garnish with extra basil leaves. Serves 4.
