    1 egg
    1 Tbsp. lemon juice
    1/2 tsp. kosher salt
    large pinch cayenne pepper
    1 cup extra virgin olive oil

    1 Combine all the ingredients except the oil in a blender jar. Blend at low speed until pale yellow. 2 With the motor running, pour in the oil in a thin, steady stream. Continue blending until the oil is incorporated. Season with additional lemon juice, salt and cayenne as desired.

    NOTE: The Mayonnaise may be made up to a week in advance. Bring to room temperature and check the seasoning before serving. Mayonnaise can be stored in the refrigerator, covered tightly with plastic wrap, up to one week.

    Makes 1 cup
