Cornbread Stuffing with Apples and Pecan

1 1/2 sticks unsalted butter
3 med. onions, chopped fine
2 ribs celery, chopped medium
3 med. granny smith apples, cored & chopped w/ peels
6 cups cornbread, crumbled (I make the jiffy brand)
3 cups white bread, crumbled
3 cups wheat bread, crumbled
2 cups chopped pecans
1/2 cup minced fresh parsley leaves
salt and ground black pepper
Recipe
Melt 5 Tbsp. butter in a lg. skillet. add onions, celery and cook over med. until vegs are soft and onion golden... about 10 min. scrapeinto large mixing bowl.... Melt remaining 6 tbsp. butter in pan... add apples and cook over med about 5 minutes... scrape apples into bowl w/ onions & celery... add the breads, pecans and parsley and mix well.... add salt & pepper to taste.
Stuff cavity of bird... place remaining stuffing in a buttered baking dish... cover dish with a piece of buttered foil and bake until it is hot... remove foil and let the top crisp, if desired...
