    Sausage, Mushroom and Herb Stuffing

    2 cups chopped celery
    2 cups diced onions
    1/2 stick butter
    1 cup sliced mushrooms
    12 cups of bread cubes
    3 cups of vegetable (or chicken) broth
    1 tsp. salt
    1/2 tsp. pepper
    2 tsp. sage
    2 tsp. marjoram
    2 tsp. thyme
    1 to 2 cups of cooked sausage


    Saute celery and onion in butter until transparent, then add mushrooms.

    In a large bowl, combine vegetables and bread cubes. Add broth and seasonings and mix well. The best way to do this is to just dive in and use your hands. Add sausage if desired and mix well.

    If the stuffing seems a bit dry, add a little more broth and mix well until stuffing reaches desired consistency.

    Transfer stuffing to a baking dish and bake at 350 degrees for about 30 minutes.


    Extra Tips:
    Instead of just using broth, replace some of the liquid in the recipe with chardonnay, gravy or onion soup.


    Add natural turkey flavor to the stuffing even if it's being cooked separately from the bird. Use a baster to transfer some of the juices from the turkey pan to the stuffing.
