Sausage & Apple Stuffing

2 LB French bread, torn into small pieces
6 cups chicken stock, warmed
2 medium onions, diced
2 cups celery, diced
1 stick butter (1/4 LB)
5 Granny Smith apples, peeled, cored and diced 1 inch pieces
1 LB Chorizo, cooked, cooled, sliced and pulsed in food processor until minced
1/2 cup fresh sage, minced
1/3 cup fresh Italian parsley, minced
salt and pepper to taste
6 large eggs, beaten
Recipe
Soak bread with chicken stock, saut� onions and celery in butter until soft and add to bread mixture.Saut� apples in butter until slightly browned and add to bread mixture.Mix in Chorizo, eggs, herbs, salt and pepper to taste, mix thoroughly.
To bake stuffing in turkey:
Loosely fill turkey cavity with stuffing mixture. Bake according to requirements for cooking turkey.
For leftover stuffing:
Butter ceramic baking dish and place leftover stuffing in dish and cover with buttered foil, buttered side down.
Bake stuffing in dish for about 30-40 minutes at 350 degrees or until heated all the way through.
