    1/2 cup of chopped celery and leaves
    1 yellow onion, chopped
    2 tablespoons of minced parsley
    1/4 cup of butter or margarine
    4 cups of diced peeled tart apples
    1/4 cup of firmly packed light brown sugar
    1 teaspoon of salt 1/2 teaspoon each of ground sage, marjoram, and thyme
    1/4 teaspoon of pepper
    2 cups of toasted bread crumbs

    Sauté the celery, onion, and parsley in butter for 5 minutes. Add the apples, sugar, and seasonings. Cook for 5 minutes longer. Add the bread crumbs and mix well. Really good with pork or duck. Makes 4 cups
