    1 large angel food cake or 2 angel cake loaves
    1 (1/4-ounce) envelope unflavored gelatin
    1/2 cup cold water
    3/4 cup lemon juice
    1 1/4 cups sugar, divided
    6 pasteurized eggs, separated
    2 tablespoons grated lemon zest
    2 cups heavy cream, divided
    2 tablespoons rum (optional)
    1 pint berries, lightly sugared (sliced strawberries, raspberries, blueberries, etc.)

    Break angel food cake into walnut-size pieces. Place in bowl. Sprinkle unflavored gelatin over cold water in bowl.

    In top of double boiler, mix lemon juice, 1/2 cup sugar, egg yolks and lemon zest. Stir and cook over hot water until thick. Remove from heat. Stir in gelatin mixture. Cool.

    Beat egg whites until foamy. Gradually beat in 3/4 cup sugar until stiff. Fold into egg yolk mixture. Beat 1 cup heavy cream until stiff. Fold into egg yolk mixture. Fold into angel food cake pieces. Turn into 10-inch springform pan. Chill for several hours or overnight.

    To serve, beat 1 cup heavy cream until stiff. Fold in rum. Spoon over trifle. Top with berries. Remove ring from springform pan.
