    1/4 c Vegetable Oil
    1 tb Grated Lemon Peel
    3 tb Lemon Juice
    1/2 ts Salt
    1/4 ts Pepper
    1 cl Finely Chopped Garlic
    1 c Uncooked Long Grain Rice
    1/4 c Chopped Green Onions
    1/4 c Chopped Fresh Parsley
    1 sm Chopped Red Bell Pepper
    1 cn Artichoke Hearts, 1/4'd

    Recipe



    Combine oil, lemon peel, lemon juice, salt, pepper, and garlic. set aside.
    Cook rice according to package directions.

    Mix rice, green onions, parsley, bell pepper, and artichoke hearts. Toss
    with vinaigrette. cover and refrigerate at least 3 hours until chilled.
