3 medium sized zucchini, sliced
1 cup of bread crumbs
Small onion, chopped finely
Salt and pepper to taste
1/2 cup of grated cheese
1 cup of tomato or V-8 juice

Grease casserole dish. Layer zucchini, bread crumbs, onion, salt and pepper, and cheese until dish is full. Pour juice over. Bake at 350ºF. for 20-30 minutes. Serves 4-6.
