Braised Broccoli Rabe

2 bunches broccoli rabe (about 1 pound each)
3 tablespoons extra virgin olive oil
3 large garlic cloves, chopped
Sea salt to taste
Approximately 1/4 cup cream or more, as needed

Remove any large broccoli stems. Bring a large pot of salted water to a boil over high heat. Add the broccoli rabe and cook for about 30 seconds just to remove some of its bitterness. Drain and cool under running water. Gently squeeze to remove excess water. Cut any large pieces in half, but leave the broccoli rabe in largish pieces.
Heat the olive oil in a large skillet over moderately low heat. Add the broccoli rabe, garlic and salt. Add about 3 tablespoons water. Cover, leaving a crack for steam to escape. Adjust the heat so the broccoli rabe simmers gently. Cook, turning occasionally, for 15 minutes, adding a little water as needed to keep the garlic from burning.
Begin adding cream a little at a time, adding more only when the previous addition has been absorbed. Add small amounts of water if needed to keep the mixture from cooking dry. Continue cooking the broccoli rabe, partly covered, until it is completely soft and almost starting to melt, about 15 minutes longer.
Taste and adjust seasoning.
