    1 medium size egg plant
    1 can of tomato paste
    2 cups of tomato sauce
    2 pounds of round steak, sliced into 2 x 4 pieces
    olive oil
    curry powder
    salt
    pepper

    Recipe



    Place the pieces of steak into a quart bag with 4 dashes of olive oil, 2 table spoons of curry powder, salt, and pepper. Let it marinate for 1 hour in frig.

    Peel the eggplant and slice it long ways. Leave the seeds in the pieces. Place them into a hot skillet and brown both sides. You may use olive oil for this or any type of cooking oil, as you desire. The texture of the plant will become slick. This is a signal that the plant is ready to be removed.

    When the hour is up, place the meat in the bottom of a glass baking dish and add half the tomato paste and juice then place the pieces of eggplant over the top of the meat. Pour the remaining tomato sauce and juice on top. Bake at 350 for 1 hour. Serve hot with rice.
