    1 large eggplant
    1 cup grated cheese
    1 teaspoon salt
    1/8 teaspoon pepper
    Few grains cayenne pepper
    2 tablespoons butter or shortening

    Recipe



    Pare eggplant and cut in slices. Cook in boiling salt water until tender. Drain well and mash. Put a layer in a greased baking dish, sprinkle with cheese, salt and pepper and cayenne and dot with small bits of butter or Crisco shortening. Repeat this process until all the ingredients are used, having a layer of cheese on top. Bake in a hot (400°) oven for 20 minutes or until cheese is brown.
