    List of Ingredients




    - 1 large eggplant cut into thin slices

    - 1 cup canola oil (because it has the least amount of fat)

    - ½ tsp. pepper/dash lite salt

    - 1 lb 98% fat free ground sirloin fried in 2Tbls. 40% lite margarine. Using a fork to break up the chop meat while sautéing it till the pink is gone.

    - 1½ cup (no salt added) tomato sauce.

    - ½ cup no fat grated parmesan

    - 1/3 cup Egg Beatersmixed with additional 1 Tbls. of no fat grated parmesan

    - In canola oil, fry eggplant to a golden brown. Place paper towel. Lightly sprinkle them with some lite salt to drain. In large casserole place a layer of eggplant. some chop meat, some sauce and sprinkle with some cheese. Repeat procedure until all the eggplant is used. Pour the egg mixture over the top of the eggplant. Bake in a pre-heated 400 degree oven for 20 minutes. Servers four.
