    Ed Radzvilla's Stuffed Green Peppers

    5-6 large green peppers
    24 oz ground beef
    12 oz ground sausage
    1 Tbs margarine
    1 cup red onion (diced)
    2 tsp granulated garlic
    1 tsp ground black pepper
    1 tsp salt
    1 cup breadcrumb
    2 Tbs Parmesan cheese
    2 tomatoes (diced largely)
    1 egg
    1 cup cooked white rice
    1 cup marinara sauce

    In a large saute pan, saute red onions in margarine over medium heat (over heating can cause the onions to burn). When the onions become transparent, add the ground beef and sausage. Cook the meat until all red has disappeared. Strain the beef, sausage, and onion mixture thru a colander. Dispose of the grease. In a large mixing bowl combine the beef, sausage, and onion mixture with the remainder of ingredients. Hand mix thoroughly. Trim the top of green peppers and de-seed. Discard the tops and seeds. The remainder of the pepper will serve as "a bowl". Stuff approximately 6 ounces of stuffing mix into each pepper. Arrange peppers in an upright position into a casserole dish and cover. Bake at 375 for 50-60 minutes. Internal temperature should reach a level of 165 degrees. Adjust cooking time for preference of texture of the green pepper. Longer cooking time will increase the softness of the pepper with out damaging the stuffing mix. Top the Baked Stuffed Pepper with hot marinara sauce. Serve with fresh mashed potatoes for a very hearty meal. Sprinkle fresh grated Parmesan cheese and chopped parsley over entire plate for added appearance and flavor.
