Firehouse Red Beans & Rice

List of Ingredients
1 can dark red kidney beans (rinsed)
1 large onion, chopped
2 cloves garlic, chopped
3 stalks parsley, chopped
1/2 to 1 tsp. crushed red pepper (adjust to taste)
2 bay leaves
2 tbsp extra virgin olive oil
2 cups cooked rice
1 pkg. Flavoed Sausage
salt and pepper to taste
hot pepper sauce (optional)
Recipe
Heat 2 tbsp of olive oil in a large skillet over medium low heat. Slice the sausage into bite-sized pieces and saute for 2-3 minutes. Remove meat from skillet and set aside. Add onions and garlic to the skillet and saute. Return the meat to the skillet and add remaining spices and beans. Cover and simmer 15 minutes, stirring occasionally. Uncover and continue cooking 8-10 minutes. Serve over rice and add hot pepper sauce (if you dare!)
