Gaetano's Eggplant

1 whole eggplant (cut in half)
1/2 whole chopped onion
1 whole chopped tomato
1 cup grated sharp cheddar
1 cup fresh bread crumbs
salt/pepper
Recipe
Carefully cut around the skin in each half of the eggplant, keeping skin intact. Put in 375 oven for 30-45 minutes or until tender. Carefully remove eggplant from skin (reserve skin for filling) and chop eggplant coarsely. Put in skillet and fry with onion, then tomato, adding salt and pepper to taste. Add cheese at the end and stir quickly to blend.
Put mixture back inside the eggplant skin and top with buttered bread crumbs. Bake at 350 for approximately 20 minutes or until bread crumbs are browned. Serve hot.
