    Green Beans with Garlic & Dill

    2 pounds of green beans
    1/2 teaspoon of salt
    1/4 teaspoon of pepper
    1/4 teaspoon of dry mustard
    2 tablespoon of olive oil
    2 tablespoon of lemon juice
    8 sprigs fresh dill, chopped
    2 cloves garlic, pressed

    Blanch beans in boiling salted water for about 5 minutes or until cooked but still crisp. Rinse immediately in cold water. Chill. In a small bowl combine salt, pepper, mustard, oil, lemon juice, dill and garlic. Beat well with a whisk. Pour over beans and marinate for 1 hour before serving. Serve cool, but not cold. Serves 8.
