1 pkg. (10 oz.) frozen green peas
2 tbsp. butter
1 clove garlic, peeled & squashed,
not minced
1 sm. white onion, sliced
3 tbsp. water
1/2 tsp. salt
1/4 tsp. pepper

Here is a way to dress up quick-to-fix frozen baby green peas.
Peas have a special affinity for the flavor of garlic and the white
onion rings look pretty as well as add to the flavor of this
vegetable dish. 1. Heat butter in saucepan that has a tight
fitting lid; add garlic and saute over medium to high heat for
15 seconds or until it is coated with butter. Add the onion.
Saute quickly until onion rings are separated. 2. Add peas and
toss with spatula until vegetables are mixed. 3. Add water.
Cover, bring to a boil. Then turn heat down to medium or low
and steam for 4 to 5 minutes. 4. Season with salt and pepper. If
liquid has not all boiled off, stir over high heat until it
disappears. 5. Turn into serving dish; remove garlic before
serving. TIPS: If desired, you may add a pinch of your favorite
herbs to the peas, such as basil, tarragon or marjoram. Good served
with: Any baked or roasted poultry, fish, meatballs or meatloaf.
FOR 2 SERVINGS: Half of the ingredients. FOR 8 SERVINGS: Double
the ingredients.
