    1 zucchini, sliced
    1 summer squash, sliced
    1 sweet onion, sliced
    1 red pepper, sliced
    1/2 cup olive oil
    2 teaspoons lemon pepper
    1 teaspoon kosher salt
    2 teaspoons minced garlic

    Recipe



    Mix sliced vegetables in large bowl. Stir in olive oil, lemon pepper, salt, and garlic. Grill on medium-high in vented grill rack for 7-10 minutes. Stir as needed. The vegetables will be lightly browned and still slightly crisp.

    Serve with grilled chicken breast and microwaved wild rice. This is a great summer dish with no kitchen clean-up!
