    If you're partial to shiitake mushrooms, substitute large fresh shiitakes for the portobellos.

    List of Ingredients




    4 large portobello mushrooms (about 1 pound)
    1/2 C. butter
    1/4 C. chopped fresh parsley
    3 cloves garlic, minced
    1/2 tsp. salt
    1/4 tsp. freshly ground pepper
    Vegetable cooking spray

    Recipe



    Remove and discard stems from mushrooms; set mushrooms aside. Combine butter and next 4 ingredients in a small bowl, stirring well. Brush tops of mushrooms with butter mixture.
    Coat grill rack with cooking spray; place on grill over medium-hot coals. Place mushrooms on rack, top side down, and grill, covered, 4 minutes. Turn mushrooms, brush with remaining butter mixture, and grill, covered, 4 minutes or just until tender.
    Yield: 4 servings
