I Can't Believe It's Delicious Spinach

For 4 servings:
2 bunches fresh spinach, stems removed and washed*
4 cloves garlic, minced
1/2 cup vegetable or chicken stock
1/2 teaspoon freshly grated nutmeg
1/3 cup pine nuts, browned in a little butter in a small skillet
Recipe
*The best way to wash spinach is to put it in a large bowl (or a sink) of tepid water. The sandy soil will sink to the bottom. Rinse bowl and repeat once or twice more.
Coarsely chop cleaned spinach (no need to be too precise - it'll wilt when it cooks anyway).
In a large skillet, heat a little olive oil and add garlic. Stir just until garlic is coated. Add spinach and mix with garlic, stirring until spinach starts to get limp. Add stock and nutmeg. Cook until spinach is wilted. Meanwhile, brown pine nuts, then toss with cooked spinach.
To serve: Place a large spoonful in the center of a dinner plate and top with a piece of grilled chicken or fish. Decorate with a border of tomato wedges. You can also stir this spinach into cooked pasta or rice.
