10 small white onions (sliced)
4 tsp olive oil (for sauteing)
2 tbsp brown sugar
1 tbsp granulated sugar
3 tbsp balsamic vinegar
2 tbsp sherry
salt and pepper to taste
Recipe
Heat olive oil in saute pan. Add sliced onions. Sprinkle with sugars and warm until onions wilt, stirring occasionally once onions begin to brown.
Increase heat and caramelize onion slices until uniformly brown.
Sprinkle with balsamic vinegar and sherry and cook 1 minute more. Season with salt and pepper to taste.
