Oven Roasted Home Fries w/Pancetta

2 1/2 pounds red potatoes
2/3 cup olive oil
1 1/2 tablespoons fresh rosemary, minced
1 small onion, thinly sliced
1/4 cup pancetta, chopped
Salt and pepper to taste Recipe
Preheat oven to 350F.
Cut potatoes into bite-sized chunks and set aside. In a large bowl, combine the oil, rosemary, and garlic. Add the potatoes, onion, and pancetta, tossing until well-coated. Salt and pepper to taste. Spread the potato mixture into a shallow baking dish (about 12 x 17-inch), and bake for 1 1/4 hours, or until the potatoes are tender and golden brown. Serve immediately.
