    3 Portabella mushroom caps. clean and remove stems
    3 oz olive oil
    1 1/4 c. walnut pieces
    8 tsp.sugar
    1 medium red onion
    1/3 c. butter
    1/3 c. olive oil
    1/4 lb gorgonzola cheese

    Recipe



    Coat mushroom caps with the 3 oz of olive oil and set aside, Toast walnut pieces in dry saute pan for 10 minutes or until browned. Remove from pan . Add a small amount of water to just dampen the walnuts Add 4tsp.of sugar to walnuts, toss and set aside.

    Slice red onion into 1.4 inch rings, Separate rings, dampen with water and sprinkle with remaining sugar. In saute pan add butter and ollive oil. Add onion rings and heat until carmelized. next add walnuts and cook for 10 minutes. Put mushroom caps in a foil tent and cook for 5 minutes on each side.remove from grill, retain foil tent. With mushroom caps, stem side up, top with onion and walnut mixture, top with gorganzola cheese. return to grill. replace tent and cook until cheese is melted (approx. 2 minutes.) serve while hot,
