Sautéed Broccoli Rabe

2 lb. broccoli rabe
2 Tbsp. olive oil
1 tsp. minced garlic (2 cloves)
½–1 tsp. crushed red pepper
1–2 Tbsp. fresh lemon juice
Salt and ground black pepper
Recipe
Thoroughly wash the broccoli rabe and cut off any woody stems and tough leaves.
Heat the oil in a large skillet over medium heat. Add the garlic and crushed red pepper; gently cook for two minutes until garlic is softened. Add the broccoli rabe and cook for 5 to 7 minutes or until it is crisp-tender, turning occasionally to cook evenly. Remove from heat. Add the lemon juice and season to taste with salt and pepper. Makes 6 to 8 servings.
