    Scallion Cheese Filled Tomatoes

    6 cherry tomatoes
    1/4 cup of finely chopped scallions
    1 ounce chevre ( French goat cheese)

    Cut a thin slice from the stem end of each tomato. scoop out and discard the pulp, reserving shells, set aside. In a small bowl combine the remaining ingredients. mixing well. Fill each reserved tomato shell with an equal amount of scallion cheese mixture. Preheat broiler. Set tomato shells on nonstick baking sheet and broil until the cheese is bubbly, about 1 minute. Serve warm. Makes 2 servings
