    Spinach Madeleine

    Source of Recipe

    Internet

    List of Ingredients

Two 10-ounce Boxes of Frozen, Chopped Spinach
    Butter or Margarine
1/2 Bunch of Green Onions (tops included), chopped
    Garlic (fresh-chopped or powdered)
    Celery Salt
    1 Tablespoon Worcestershire Sauce
    Flour
    1/4 to 1/2 Cup Cream
One 6-ounce Package Jalapeno Pepper Cheese
    Breadcrumbs & Paprika (for topping)

    Recipe

Boil the spinach in salted water until tender (just a few minutes). Drain (but reserve some of the spinach water to use later). Set aside.

In a saucepan or skillet, melt some butter or margarine and lightly saute the chopped green onions and garlic. Add 1 tablespoon Worcestershire sauce and season with the celery salt (to taste).

Add a few tablespoons (try two) of flour to begin the basis of a white sauce. Stir. Add 1/4 to 1/2 cup cream and 1/4 to 1/2 cup of the reserved spinach water. Also add 1/2 to 3/4 of the package of the 6-ounce package of Jalapeno cheese. Stir until cheese melts.

Stir in the drained spinach. Turn into a butter- or margarine-greased casserole, top with seasoned bread crumbs, and garnish with a sprinkling of paprika.

Bake 20 to 30 minutes in a Moderate oven until hot.
