    Stuffed Tomatoes with Feta Cheese

    List of Ingredients




    4 medium tomatoes
    1/2 C. crumbled feta cheese
    1/4 C. fine, dry breadcrumbs
    2 T. finely chopped green onions
    2 T. finely chopped fresh parsley
    3 T. olive oil

    Recipe



    Slice off top of tomato; carefully scoop out pulp. Invert tomato shells onto paper towels to drain. Coarsely chop pulp; place in bowl. Stir in cheese and remaining ingredients. Spoon evenly into shells. Place in an ungreased 8-inch square baking dish. Bake, uncovered, at 350* for 15 minutes or until thoroughly heated.
    Serve immediately.
    Yield: 4 servings
