    Zucchini With Tomatoes And Green Pepper

    1 Zucchini (about 1/2 lb)
    2 medium Tomatos
    1 medium Green peppers
    1/2 cups Onions, chopped
    1/4 cups Olive oil
    ~ Salt & freshly ground black pepper

    Recipe



    1. If the brolier and oven have separate temperature conrols, preheat the broiler to high and the oven to 400º. If they have the same temperaure control, preheat the broiler.

    2. Trim off the ends of the zucchini and core the tomatoes. Cut each into ten 1/2-in thick slices. Arrange the slices, edges slightly overlapping, alternating the zucchini with tomato, in a smallflameproof baking dish.

    3. Core thegreen pepper, cut in half and remove the seeds. Finely chop the pepper.

    4. Sprinkle the green pepper, onion and saltand pepper to taste over the zucchini and tomatoes. Sprinkle even with the oil.

    5. Broil about 5 minutes. Take carethat the vegetables do not burn on top.

    6. Place the baking dish in the oven and bake about 25 minutes or until the vegetables are tender. Serve hot.


    Makes4 servings.

    VARIATIONS:

    Sprinkle 1 tbsp chopped fresh or 1 tsp dried herbs such as basil, thyme or marjoram or a mixture of all three over the vegetables withthe salt and pepper before cooking.

    About 5 minutes before the vegetables havefinished cooking, sprinkle over a mixture of 3 tbs each freshly grated Parmesancheese and fine soft bread crumbs. Continue baking until the top is golden brown.
