List of Ingredients
1/2 cup water
1 1/2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup all-purpose flour
1 large egg
1 large egg white
1/4 cup grated Parmesan cheese, freshly grated
2 dashes hot pepper sauce
1/2 teaspoon dried sage, crumbled
6 ounces lump crabmeat, picked clean
Recipe
1. Preheat oven to 425 F. Spray a baking sheet with nonstick spray.
2. Bring the water, olive oil, salt and pepper to a boil in a medium saucepan over medium-high heat. Reduce the heat to medium, then whisk in flour. Continue cooking and whisking until the bottom and sides of the pan are coated with a white film. Scoop the mixture into a large bowl; cool 3 minutes.
3. With an electric mixer on medium speed, beat the egg and egg white into the flour mixture until smooth; then beat in the cheese, pepper sauce, and sage until smooth, about 1 minute. Stir in the crabmeat. Drop the mixture by tablespoonfuls onto the baking sheet, spacing the puffs 1 inch apart. Bake 30 minutes or until puffed and golden brown. Serve immediately or at room temperature.
