Barbecue Beef Pouch Potatoes

List of Ingredients
4 medium potatoes, cut in 1/2" cubes
1 pound 96% lean ground beef
7 ounces canned whole kernel corn, drained
1 packet taco seasoning mix
4 ounces reduced fat cheddar cheese, shredded
1/2 cup salsa
Recipe
1. Heat oven to 450. Cut 4 sheets of heavy duty aluminum foil in 12-inch squares. In a bowl, mix potatoes, ground beef, corn and taco seasoning. Place equal portions, about 1 1/2 cups each, on the right sides of the foil squares. To seal each pouch, fold left side of foil over mixture. Make 1/2-inch folds along open edges; fold again to seal, leaving room for heat to circulate within. Place on a baking sheet in the center of the oven. Bake for 35 minutes.
2. To open pouches with scissors, cut a cross in the top of each, then pull back points, being careful as steam is released. Top contents of each pouch with 1/4 cup of the cheese and 2 Tbsps. of salsa.
