List of Ingredients
1/2 pound ground beef
11 ounces mexicorn
1/2 cup cornmeal
1/4 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon canola oil
1/2 cup skim milk
1 egg
1/4 cup salsa
3 ounces cheddar cheese, lowfat
onion , to taste
garlic, to taste
4 ounces green chiles
Recipe
Brown meat. In separate bowl, combine corn- drain liquid, cornmeal, baking soda, salt, oil, milk, egg and salsa. Pour half into crock that has been sprayed with cooking spray. Layer onion, garlic, green chilies and beef on top of cornmeal mixture. cover with remaining cornmeal mixture. Cover and cook on high 2-2 1/2 hours.
Yield: 4 servings= 296 cals, 8g fat, 3g fiber
