    2 large egg(s)
    1 cup McNeil Nutritionals SPLENDA (R) No Calorie Sweetener
    2/3 cup canola oil
    1 tsp baking soda
    1/2 tsp table salt
    1 tsp ground cinnamon
    3/4 cup shredded carrots
    1 tsp vanilla extract
    1 1/2 cup whole-grain wheat flour

    Recipe



    Beat together the eggs, sugar, and oil. Combine flour, soda, salt, and cinnamon and add to the sugar mixture and beat well. Stir in the carrots (and nuts). Pour into a greased and floured Bread n Cake pan. Cover and place in the Crock Pot Slow Cooker. Cover. Bake on High for 2 1/2 to 4 hours.

    Notes:
    This is a regular carrot cake recipe modified for Core.
    This is a CORE recipe except for the flour. 1 point per serving. 1 cup of chopped walnuts are optional and will add 1 point to each serving.
