List of Ingredients
1(3lb) eye round roast
1(6oz) jar white horseradish
1pound small red, or white potatoes cut in half
3/4lb baby carrots
1 large onion
2cups reduced sodium veggie broth
1/2unsweetened applesauce
2 tablespoon dijon mustard
2 tsp dried thyme
2 tsp paprika
1/2 tsp celery seeds
1/2 tsp salt
1/2 ground fresh pepper
Recipe
1 heat a large nonstick skillet over medium high heat add the beef and cook turning occasionally until browned about 5 minutes transfer the beef to a 5-6 quart slow cooker spread with horseradish place the potatoes carrots and onion around the beef
2 combine the broth applesauce mustard thyme paprika celery seeds salt and pepper in a medium bowl pour over the veggies taking care not to disturb the horseradish coating on beef
3 Cover and cook until the beef and veggies are fork tender 4-5 hrs on high 8-10 hrs on low transfer the beef to a cutting board let stand 10 mins cut into ten slices and serve with the veggies and broth
per serving 1 slice of beef with 3/4 veggies and broth
