Beer can chicken

1/4 cup Kosher salt
1/4 cup brown sugar
1 teaspoon paprika
2 Tablespoons coarse ground pepper
12 ounces Beer canned
Liquid Barbecue Smoke®
lemon juice
garlic cloves

Recipe
First - wash & dry the chicken and make a rub for the outside of the chicken using 1/4 cub kosher salt, 1/4 cup brown sugar, 1 tsp paprika & 2 TBSP course ground black pepper. Do not remove the skin before you cook, but you certainly could prior to eating.
Next - take a 12 oz can of any kind of beer & pour out (or drink) about 1/4 of it. Into the beer add any seasonings (like liquid smoke, a little of the rub, a sprig of rosemary...) that you desire. I usually squeeze in some fresh lemon and a clove of garlic).
Now - I place some garlic, the squeezed lemon half into the cavity of the chicken and then put the beer can into the chicken then balance it on the grill. Sometimes I put part of an onion or a potato into the other end of the chicken to keep the steam in.
These are supposed to cook on indirect heat, so put the chicken on the side where the flames are not on or where there is no charcoal. Cover the grill and allow to cook for 1-1.5 hours for a 3-4 LB chicken (it is supposed to be 180F).
We did ours in the oven (in fact we did 2). We just set the cans of beer in roasting pan and put the chickens on top of them, baked at 350 degrees until done. Delicious.
