2/3 cups low-sodium soy sauce
1/2 cup unpacked brown sugar
1/2 tsp garlic powder
1 tsp ground ginger
2 fl oz. bourbon
2 pounds boneless chicken thighs
Recipe
Whisk all ingredients except chicken and put into a big ziplock bag. Add the chicken cut into bite-sized pieces and marinate overnight. Pour contents of bag into a large baking pan, making sure that the chicken is in a single layer, and bake at 325 degrees, basting frequently, for 1 1/2 hours or until well browned.
