Chicken with Spinach and Feta Cheese

List of Ingredients
2 lbs. chicken breasts, pounded thin (8 halves = 24 pts)
10 oz. spinach, cooked in lemon and olive oil (1 pt)
1/2 cup Feta cheese, crumbled (6 pts)
2 eggs, one yolk, two whites (2 pts)
Seasoned bread crumbs (2 points)
2 c. sliced mushrooms
1 tbsp. flour
1/2 c. dry white wine (1 pt)
2 c. chicken broth
Lemon juice to taste
Recipe
Place spinach and Feta cheese on thin chicken breasts. Roll and secure with toothpicks. Dredge in eggs and seasoned bread crumbs. Brown in frying pan. Bake at 350 degrees for 30 minutes.
Gravy: Saute 2 cups mushrooms in spray. Add 1 tablespoon flour. Cook and mix well. Add 1/2 cup dry white wine, 2 cups chicken broth, and lemon. Cook for 3 minutes. Pour over heated chicken.
