List of Ingredients
3/4 C reduced sodium chicken broth
2 Tbsps cornstarch
2 Tbsps sugar
2 Tbsps low-sodium soy sauce
1 Tbsp white wine vinegar
1/2 Tsp ground ginger
2 Tsps peanut oil
2 med scallion, chopped
2 med mloves garlic, minced
1/4 Tsp red pepper flakes
1 Lb boneless skinless chicken breast, cut into 2" pieces
Recipe
Whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger. Set aside.
Heat oil in wok over medium-high heat
Add scallions, garlic and pepper flakes
Cook scallions and pepper for 2 minutes
Add chicken and cook until browned all over (about 5 minutes)
Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
Serve chicken and sauce over rice
Makes 4 servings
