    Greek Style Shrimp Scampi

    List of Ingredients




    1 tsp olive oil
    5 minced garlic cloves
    ½ cup chopped fresh parsley, divided
    2 28-ounce cans whole tomatoes, drained and coarsely chopped
    1 ¼ pounds large shrimp, peeled and deveined
    1 cup crumbled feta cheese
    2 tbsp fresh lemon juice
    ¼ tsp freshly ground pepper
    4 cups hot cooked spaghetti

    Recipe



    1. Preheat oven to 400 degrees
    2. Heat oil in a large dutch oven over medium heat. Add garlic, sauté 30 seconds. Add ¼ cup parsley and tomatoes. Reduce heat, and simmer 10 mins. Add shrimp, cook 5 mins. Pour mixture into a 13x9 baking dish, and sprinkle with cheese. Bake at 400 for 10 minutes. Sprinkle with ¼ cup parsley, lemon juice, and pepper, and serve over pasta.

    1 serving= 1 cup shrimp scampi, ¾ cup pasta
    Cals= 321; Fat= 7.3g; Fiber= 3g (6.5 points per serving)
