List of Ingredients
1 tsp olive oil
1 cup chopped onion
1/2 cup chopped prosciutto or lean ham (about 3 oz)
4 garlic cloves, minced
2 Tbsp balsamic vinegar
1/3 cup vodka
1 Tbsp sugar
2 Tbsp tomato paste
1/4 tsp black pepper
30 ounces (2 cans) diced tomatoes, undrained
1/2 cup fat-free half-and-half
2 Tbsp chopped fresh flat leaf parsley
Recipe
Heat oil in a saucepan or large skillet over medium-high heat. Add onion, prosciutto, and garlic; sauté 5 minutes. Stir in vinegar and next 5 ingredients (vinegar through tomatoes); bring to a boil.
Reduce heat to medium, and cook, uncovered, about 20 minutes. Remove from heat; stir in half-and-half and parsley.
