Ham 'N' Cheese Muffins

List of Ingredients
1/3 cup finely chopped onions
2 cups shredded ff cheddar cheese
1 1/2 cups rf biscuit baking mix
1/2 cup skim milk
1/4 cup egg beaters or 2 egg whites
1 cup finely chopped fully cooked low fat ham
4 oz can mushrooms drained
seasoning to taste
Recipe
In nonstick skillet sprayed with pam saute onion, and ham until tender. Add mushrooms and heat through. let set to cool while mixing other ingredients. In a bowl combine cheese and biscuit mix and seasoning. Stir in milk and egg just until moistened. Fold in cooled ham and onion mixture. Coat muffin cups with nonstick cooking spray or use paper liners: fill 3/4 full. Bake at 425 for 13-15 minutes or till a toothpick inserted near center comes out clean. Cool for 5 minutes before removing from pan. Serve warm.
