3 large onion(s)
4 medium shallot(s)
4 large garlic clove(s)
2 tsp olive oil
1/2 cup dry sherry
4 cup fat-free beef broth
1/2 tsp black pepper
2 Tbsp thyme
1/4 cup grated Parmesan cheese
Recipe
Thinly slice the onions and shallots. Mince the garlic. Chop the thyme.
Preheat oven to 450 degrees and place a shelf in the bottom most position.
In a roasting pan, mix the onions, shallots, garlic and olive oil well. Place in the oven on the bottom shelf. Roast for 25-30 minutes. Stirring every 5 minutes until the onions are golden brown. Remove the roasting pan from the oven and place on a heatproof surface. Add 1 cup of broth and scrape all the caramelized bits from the bottom and sides of the roasting pan. It will be very dark. Add the contents of the roasting pan to a soup kettle. Add the rest of the broth, the pepper, thyme and sherry. Bring to a boil. Cover and reduce the heat and simmer for 30 minutes.
Divide into 4 servings and top each with 1 TBS of the cheese.
