Cold Rice Summer Salad

Makes 6 servings @ 3 points each.
List of Ingredients
2 cups cooked brown rice
1 cup quartered cherry tomatoes
1/3 cup chopped red onion
1 can sliced olives, drained
3 T cider vinegar
2 T vegetable oil
1/2 t sugar or substitute
1/2 t salt
2 T minced parsley or cilantro
Recipe
In a large bowl combine rice, tomatoes, onion and olives. In a small bowl combine vinegar, oil, parsley, sugar and salt. Mix well. Pour over rice.
Serve in a lettuce lined bowl.
