Bette’s Cucumber Tea Sandwiches

List of Ingredients
3 loaves of good white or wheat bread with crust cut off to form neat squares
2 8 oz. blocks of cream cheese, softened
½ cup mayonnaise
¼ cup fresh dill chopped
1 clove of garlic, crushed
6 green onions chopped finely
1 tsp. salt
¼ tsp. freshly ground pepper
Fresh dill for garnish
2 English cucumbers (the long ones that are wrapped in plastic)Recipe
Peel and slice the cucumbers very thinly (a mandolin works well) and lay them on a paper towel to let excess water be absorbed by the towels. Set aside. With a good sharp knife (a serrated bread knife works well) cut the crust off the bread to form neat squares. Mix the cream cheese, mayonnaise, dill, onion, salt, pepper and garlic until well mixed and smooth. Spread the cream cheese mixture on one side of one slice of bread. Top with 3 cucumber slices and lay second piece of bread without spread on top. Cut diagonally and arrange on platter. Garnish with fresh dill and sliced cucumbers. Refrigerate until ready to serve.
*May also use radishes or watercress. This mixture is also a good dip for vegetables. Another suggestion is to add chopped cucumbers to the spread and use as a dip.
