    Fruit Filling for Tea Sandwiches

    Pineapple Sandwich Filling

    1 (20 oz.) can crushed
    pineapple with juice
    6 Tbs. sugar
    4 Tbs. cornstarch
    2 eggs
    1/2 tsp. salt
    1/2 c. mayonnaise

    Mix all ingredients except mayonnaise and cook over
    medium heat until thick. Remove from heat and add mayonnaise.
    Makes delicious party sandwiches. Can be stored for several days in fridge.

    Cheery Cherry Sandwiches

    16 oz. cream cheese
    slivered almonds (optional)
    large jar maraschino cherries with some liquid

    Soften cream cheese. Cut up cherries and add to cream
    cheese. Add enough cherry juice to make soft sandwich spread.
    Add almonds, if desired. Spread on white bread, trim crusts, cut into
    desired shapes.

    Creamy Strawberry Sandwiches

    1 loaf white or wheat bread
    16 oz. cream cheese, softened
    1 box strawberries
    additional strawberries
    finely chopped nuts, optional

    Clean and stem berries and dry. Run through food processor with cream cheese.
    Remove crusts from bread. Spread mixture on bread to make sandwiches. May cut into
    triangles or use cookie cutters for different shapes. Top with a half berry, sliced
    lengthwise and or a sprinkle of chopped nuts.
