    CATHY'S FISH CHOWDER

    List of Ingredients


    • 1/2 c butter
    • 3 c diced onion
    • 1/4 c finely grated carrots
    • 1/2 c flour
    • 12 c concentrated fish stock
    • 4# chowder fish, cod, flounder & salmon
    • 2 c half & half
    • 1/2 c Jack cheese
    • FISH STOCK:
    • 6# fish frames
    • 1 stalk celery
    • 1 carrot, sliced
    • 2 onions, sliced
    • 4 peppercorns
    • 3 quarts water


    Instructions


    1. Sauté onions, carrots in butter for 5 minutes. Add flour & cook 4 minutes stirring. Whisk in fish stock & bring to a boil; reduce heat & simmer 10 minutes. Add a combination of your favorite fish, simmering another 10 minutes. Stir in 2 c half & half & 1/2 c Jack cheese simmering 5-8 minutes more. Freezeswell.

    2. Bring to a boil & simmer 30 minutes. Strain out carcasses & boil another 25-30 minutes to concentrate.



    Final Comments


    Freezes well.
