CATHY'S FISH CHOWDER

List of Ingredients
- 1/2 c butter
- 3 c diced onion
- 1/4 c finely grated carrots
- 1/2 c flour
- 12 c concentrated fish stock
- 4# chowder fish, cod, flounder & salmon
- 2 c half & half
- 1/2 c Jack cheese
- FISH STOCK:
- 6# fish frames
- 1 stalk celery
- 1 carrot, sliced
- 2 onions, sliced
- 4 peppercorns
- 3 quarts water
Instructions
- Sauté onions, carrots in butter for 5 minutes. Add flour & cook 4 minutes stirring. Whisk in fish stock & bring to a boil; reduce heat & simmer 10 minutes. Add a combination of your favorite fish, simmering another 10 minutes. Stir in 2 c half & half & 1/2 c Jack cheese simmering 5-8 minutes more. Freezeswell.
- Bring to a boil & simmer 30 minutes. Strain out carcasses & boil another 25-30 minutes to concentrate.
Final Comments
Freezes well.
